ci: drop unneeded yoke-derive pin from MSRV script

yoke-derive 0.8.3 used the inherent `str::from_utf8`, which was unstable
on Rust 1.85, so it had to be pinned to 0.8.2. Version 0.8.4 (current
latest) no longer uses that method and compiles cleanly on the MSRV, so
the pin is no longer necessary.
